We tried making Kylie Jenner’s Olive Oil Cake

After weeks of seeing TikToks and Instagrams of a certain cake, I finally caved in. I made the internet famous olive oil cake, popularized by Kylie Jenner’s infamous cake cutting techniques. The version loved by the Kardashian family, costs a whopping $42, but I had to see what all the fuss was about without breaking the bank. Olive oil has been used for ages to make extra moist cakes, it’s a great addition to boxed brownies or even as a replacement for butter.. I tweaked this recipe from Bon Appétit, to give the cake a more citrus flavor. Topped with loads of powdered sugar and a sprig of rosemary— the cake is ready for your afternoon snack, but not without instagraming it first!
Ingredients:
● 1 ¼ cups extra virgin olive oil
● ¾ cup granulated white sugar
● 2 cups all-purpose flour
● ⅓ almond flour
● 2 teaspoons baking powder
● ½ teaspoon baking soda
● ½ teaspoon kosher salt
● 3 tablespoons Cointreau or other liqueur
● 1 tablespoon finely grated lemon zest
● 3 tablespoons fresh lemon juice
● The juice of an orange
● 2 teaspoons vanilla extract
● 3 large eggs
● Powdered sugar
● Rosemary for garnish
● Spring form pan
Directions:
1. Preheat oven to 400 degrees
2. Line the bottom of the pan with parchment paper, grease with olive oil
3. Sift flour, almond flour, baking powder, baking soda and salt into a medium bowl, whisk
4. Combine Cointreau, vanilla, lemon juice and half of the orange juice into a bowl
5. Using an electric mixer or stand mixer fitted with a whisk attachment beat eggs, lemon zest and sugar until pale and fluffy.
6. Mix in Cointreau mixture
7. On high speed gradually add the dry ingredients, make sure you scrape the bowl as you go so that everything is mixed in
8. Pour batter into the greased and lined spring form pan. Tip: Tap the pan on the counter to get rid of air bubbles to ensure a flatter cake
9. Immediately reduce oven temperature to 350 degrees once the cake is put inside
10. Once the cake is golden brown, around 50 minutes, take the cake out of the oven and let cool for 40 minutes
11. Once cool remove the cake from the pan, and poke holes on the surface
12. Mix together two tablespoons of olive oil and the rest of the orange juice and pour over the cake
13. Wrap the cake tightly in plastic wrap and let it rest overnight in room temperature
14. When ready to serve, you can level out the cake with a serrated knife for the extra aesthetics
15. Sift powdered sugar on top and garnish with a sprig of rosemary, et voilà a cake with the Kardashian seal of approval. Sorry Kylie, but I couldn’t bear to cut my hard work into odd shapes. There you have it! Now, Instagram and munch away! Recipe adapted from Bon Apetit
