The Matador, which is served on a flour tortilla that is lined with a crispy corn tortilla, is a chopped brisket taco with grilled jalapeños, pickled onions, grated jack cheese, sour cream, avocado, and is topped with tomatillo sauce. This brisket taco has the perfect mix of spice, tang, and coolness from the pickled onions, tomatillo sauce, avocado, and sour cream. 

2. Trailer Park Hillbilly Style

This spin on the Trailer Park taco from the main menu at Torchy’s includes the signature flour tortilla with fried chicken and is topped with lettuce, green chiles, pico de gallo, cheddar jack cheese, and poblano sauce – When ordered “hillbilly style,” your taco will have green chile queso instead of lettuce, and also have chorizo and chopped bacon, in true Texas fashion.

With all the flavor from the grilled corn, beef fajita, and chipotle sauce, this one sure is mad and extremely delicious. 

4. Green Chile Pork Missionary Style

This tasty take on the Green Chile Pork taco still contains the corn tortilla, but it’s crispy and wrapped in a flour tortilla. Pork carnitas, which has been slow-roasted and simmered with green chiles, is topped with guacamole, pickled onions, cilantro, chipotle sauce, and of course jack cheese. This version replaces its onions, tomatillo sauce, and cotija cheese with pickled onions, chipotle sauce, and jack cheese.

5. Ace of Spades

Finally, the Ace of Spades, which is one of the more unique tacos out of our picks. This secret menu item is contained in two flour tortillas, which are filled with smoked beef brisket, grilled jalapeño cheddar sausage, a fried egg, cotija, cheddar jack cheese, green chile queso, sour cream, cilantro, and diablo sauce. Sadly, it does not seem that Torchy’s still has the Tipsy Chick taco. They did bring it back for a short time during August of 2021 when they made it the taco of the month. Don’t worry, Torchy’s still has an extensive menu (both secretive and not) where all taco lovers can explore and find their new favorite.
