What You’ll Need For This Recipe:
CHIPOTLE SAUCE:
1 (7 oz) can chipotle chiles in adobo
1 ½ cups of your favorite barbecue sauce
½ cup (packed) light brown sugar
¼ cup whiskey
20 cloves garlic
Juice of 2 limes
CHICKEN:
4 chicken breasts
Kosher salt and pepper
6 tablespoons of honey
MANGO SALSA:
1 large, firm mango
1 ½ avocados
5 tbsps red onion
¾ cup cilantro leaves
Grated zest and juice of 1 lime
Kosher salt and pepper
After debating over a million different cook books, we finally decided on trying Chrissy Teigen’s “Cravings.” One of the first recipes we made from her was this chipotle-honey chicken with bright salsa. We loved the way it turned out but tweaked a few things to better fit what we like. We hope you enjoy!
The first thing we suggest making is the chicken and marinade. We’ve found that the longer the chicken stays in the marinade, the more flavorful and tender it is– especially in this recipe. For the chipotle sauce, you will need to blend the chipotle chiles, barbecue sauce, brown sugar, whiskey, garlic and lime juice. Pulse until it is smooth! For those who have never had chipotle chiles, you aren’t alone. We had never tried them prior to making this dish but boy, are they spicy. Chrissy called for more than a can of chiles but we cut it down to a can– less depending on how we are feeling. These chiles will definitely make you feel something so do what you want with that information.
Put the chipotle sauce to the side for a bit. Pull out your chicken and season generously with salt and pepper. Grab a large Ziploc bag and pour in two cups of your chipotle sauce. Dunk your chicken in and pop it into the fridge for at least 2 hours. We suggest making the marinade in the morning and letting the chicken sit until later in the day!
Once it’s time to eat, preheat your oven to 375 degrees. While you’re waiting for your oven to heat up, start on the mango salsa. In a small bowl, add your finely diced onion, mango and cilantro. We like to add bigger chunks of avocado so we didn’t chop it as much. Throw in your lime zest and lime juice as well as salt and pepper.
By now, your oven should be ready! Grab your bag of chicken and arrange onto a lined and greased baking sheet. We poured the rest of the sauce in the bag over the chicken at this point. The more sauce, the better. Bake for about 35 minutes! We recommend leaving the chicken in for a bit longer to give it a crispy edge.
After pulling your chicken out of the oven, put the rest of your chipotle sauce on top and drizzle with honey. The honey cuts the spice a bit so the more, the merrier. Put the chicken back in the oven for about 10 minutes.
We served this chicken and salsa with rice! To dress up the rice, add cilantro and lime juice.
