For years, my mother would always make tiger butter for holidays or special occasions. As I got older and more interested in cooking and baking, she started to share her recipes with me. I had been waiting for the perfect moment to make this special dessert and what better time to do it than in quarantine? This dessert is super quick, easy and only requires a few ingredients! I hope you enjoy it.
What You’ll Need For This Recipe:
A jar of peanut butter
A package of chocolate almond bark
Optional Toppings:
Coconut shreds
Chopped walnuts
Dark chocolate drizzle
Before starting, prepare a pan with parchment paper on it. All the ingredients can harden quickly if left alone for too long so having your pan ready helps save some time. Trust me, I’ve learned the hard way.
First, we will need to melt the peanut butter. Scoop out half a jar and put it in a saucepan over medium heat. You can take a lot of creative liberty in this recipe so if you’re feeling more or less peanut butter, don’t be afraid to do you. Let that sit until melted smooth. As you wait for that to be completely melted, move on to your chocolate.
Cube the bark and place into a microwave safe bowl. Using a glass bowl makes for easier cleanup in my experience. Place the bowl into the microwave and stir every 30 seconds, making sure you don’t burn it. Once melted, it’s time for the fun part!
Pour your melted chocolate onto the pan, creating a line down the middle. Once all the chocolate is out of the bowl, get a spoon and smooth it out so that the chocolate fills the pan. Grab your melted peanut butter in the saucepan and drizzle it back and forth over the chocolate. DO NOT SMOOTH IT OUT. Leave it like a drizzle, or Z shape, on top of the chocolate.
Time for the tiger stripes! Grab a knife, or a tool with a sharp end, and gently run it through the mixture, back and forth. This is your time to have fun with it. This pattern is your creation so make it your own. No tiger has the same stripes 😉
After making the stripes, you can add whatever toppings you like. I like to add chopped walnuts or shredded coconut. During Christmas, you can add peppermint pieces to be festive or candy corn for Halloween. Anything works!
Place the pan in the freezer for at least an hour. Once you take it out, the candy will be like glass so it’ll be easy to break apart pieces to serve. The pieces can melt pretty quickly if you leave them out for too long so always keep them refrigerated afterwards.
