Cascabel: Authentic Mexican Vegan Cuisine

Cascabel Vegan is celebrating its second anniversary! This restaurant is a popular favorite amongst the vegan community and my go-to place for authentic, Mexican, vegan cuisine. One detail that stands out to me about Cascabel is the inviting atmosphere that guests can experience.

Fun fact about the restaurant: Cascabel is Houston’s first full-service Mexican Vegan restaurant with a full bar. Events like karaoke and live music keep the restaurant’s energy as fresh as the food. Cascabel is the perfect place to enjoy quality time with family and friends.

There’s nothing more satisfying than a refreshing margarita. Cascabel offers an excellent variety of cocktails that blend well with the restaurant’s Mexican cuisine. The House Margarita is a staple and comes in fruity variations like classic lime, watermelon, and blueberry coconut, depending on the special that day! This drink is a perfect match for those who enjoy a sweet drink that still packs a punch.

Vegan Birria Tacos 

The tacos at Cascabel Vegan are unmatched! I recommend trying the “Vegan Birria Tacos.” Three corn tortillas stuffed with vegan mozzarella served with a side of barbacoa and consommé; the tacos come with a side of Spanish or cilantro rice. 

I appreciate how well the flavors in these tacos complement each other. The vegan mozzarella stuffed into the birria tacos is super gooey and fulfills that “cheesy taste” for vegans who still want to experience their cheesy cravings. 

Vegan Bistec Tacos

One of my favorite vegan meat substitutes, the bistec, is quite filling and savory. The marinated chopped soy grilled bistec with onions and peppers is an excellent choice to fill any taco or burrito of your choice. However, don’t forget the peppers and salsas; I always love to add some grilled onions on top. 

Vegan Poblano Quesadilla

I visit Cascabel frequently, and their quesadillas are never a disappointment. As the menu mentions, the poblano quesadillas combine cheesy and creamy goodness! The inside has vegan mozzarella, crema, poblano peppers, grilled onions, and corn in between a handmade flour tortilla; it also comes with a side of your favorite rice and a side salad. 

As a vegan individual, I will say that I have yet to taste any quesadillas that have the same intensity of flavors as Cascabels quesadillas. I have non-vegan friends who also enjoy their quesadillas and will say to me, ” I really can’t taste the difference.” It’s a win, everyone!

Something sweet? Yes, dessert, please!

Vegan Flan

Finally, this tasty flan pairs wonderfully with a drizzle of chocolate and vegan whipped cream (coconut milk-based). In addition, the vegan flan is gluten-free and a nut-free dessert. The menu also has other tasty desserts that the restaurant makes from scratch.
