Our REWORKED Chrissy Teigen’s Chipotle-Honey Chicken

What You’ll Need For This Recipe:

CHIPOTLE SAUCE:

1  (7 oz) can chipotle chiles in adobo

1 ½ cups of your favorite barbecue sauce

½ cup (packed) light brown sugar

¼ cup whiskey

20 cloves garlic

Juice of 2 limes

CHICKEN:

4 chicken breasts

Kosher salt and pepper

6 tablespoons of honey

MANGO SALSA:

1 large, firm mango

1 ½ avocados

5 tbsps red onion

¾ cup cilantro leaves

Grated zest and juice of 1 lime

Kosher salt and pepper

After debating over a million different cook books, we finally decided on trying Chrissy Teigen’s “Cravings.” One of the first recipes we made from her was this chipotle-honey chicken with bright salsa. We loved the way it turned out but tweaked a few things to better fit what we like. We hope you enjoy!

The first thing we suggest making is the chicken and marinade. We’ve found that the longer the chicken stays in the marinade, the more flavorful and tender it is– especially in this recipe. For the chipotle sauce, you will need to blend the chipotle chiles, barbecue sauce, brown sugar, whiskey, garlic and lime juice. Pulse until it is smooth! For those who have never had chipotle chiles, you aren’t alone. We had never tried them prior to making this dish but boy, are they spicy. Chrissy called for more than a can of chiles but we cut it down to a can– less depending on how we are feeling. These chiles will definitely make you feel something so do what you want with that information. 

Put the chipotle sauce to the side for a bit. Pull out your chicken and season generously with salt and pepper. Grab a large Ziploc bag and pour in two cups of your chipotle sauce. Dunk your chicken in and pop it into the fridge for at least 2 hours. We suggest making the marinade in the morning and letting the chicken sit until later in the day!

Once it’s time to eat, preheat your oven to 375 degrees. While you’re waiting for your oven to heat up, start on the mango salsa. In a small bowl, add your finely diced onion, mango and cilantro. We like to add bigger chunks of avocado so we didn’t chop it as much. Throw in your lime zest and lime juice as well as salt and pepper. 

By now, your oven should be ready! Grab your bag of chicken and arrange onto a lined and greased baking sheet. We poured the rest of the sauce in the bag over the chicken at this point. The more sauce, the better. Bake for about 35 minutes! We recommend leaving the chicken in for a bit longer to give it a crispy edge. 

After pulling your chicken out of the oven, put the rest of your chipotle sauce on top and drizzle with honey. The honey cuts the spice a bit so the more, the merrier. Put the chicken back in the oven for about 10 minutes.

We served this chicken and salsa with rice! To dress up the rice, add cilantro and lime juice.

Texas Tasty Blueberry Muffins

What You’ll Need For This Recipe:

2 ½ cup blueberries

2 cups flour

½ cup milk

¾ cup sugar

Lemon juice, optional

8 tbsps of unsalted butter

2 large eggs

1 teaspoon kosher salt

These muffins are some of the best we’ve ever had!

First, preheat the oven to 375 degrees. You’ll need a 12 tin muffin tin for this recipe. I didn’t use cupcake papers but you’re welcome to. Sometimes it makes the muffins come out cleaner and with less crumbs!

Next, whisk together the butter, eggs and milk in a bowl. In a separate bowl, whisk flour, sugar, baking powder and salt. Make sure the mixture is as smooth as you can get it. Mix both mixtures together and gently fold in your blueberries! When we say gently, I do mean gently. You don’t want to smush the blueberries! We like to add a bit of lemon juice to add some freshness to the muffin but this step is optional.

Finally, divide your batter evenly into each muffin tin. We like to use a measuring cup to help me with filling and keep the consistency of levels in each tin! Once the batter is in the tins, bake for 25 to 30 minutes or until the sides are light brown.

Banana Pudding-REVAMPED

What You’ll Need For This Recipe:

5 bananas

2 packages of Chessmen cookies

A packet and a half of french vanilla pudding mix

1 container of Cool Whip

2 cups of milk

1 can condensed milk

1 package of cream cheese

Mom always makes this pudding for holidays, birthdays or any event worth celebrating. This dessert is definitely a crowd pleaser. 

First, you’ll need to arrange a package of chessmen cookies into a layer, along with the cut bananas. Make sure to fill in the cracks between the cookies! My mom, the pudding pro, places a banana piece on each cookie and then goes back in to place a banana piece in between a few cookies. The more bananas, the better! 

Next, mix the french vanilla pudding mix and milk together. In a separate bowl, combine the cream cheese and a can of condensed milk. Fold in a full container of Cool Whip. Then, combine both filling mixtures. Pour the combined mixture over the first layer of cookies and bananas, smoothing it out and making sure to leave no cookie untouched. Add a top layer of cookies! Refrigerate for at least 30 minutes and serve.

Reese’s Pie

What You’ll Need For This Recipe:

Reeses pieces, chopped and whole

A Whole Carton of Cool Whip

1 1/2 peanut butter

3 tbsp of unsalted butter

A package of cream cheese

1 cup heavy cream

1 ½ cups chocolate chips

This pie was super, super rich and will definitely satisfy any sweet tooth. To start off, put a whole pack of Oreos into a blender. Make sure there aren’t any big chunks before pouring it into a medium-sized bowl. Add in your butter and stir. Next, press against the pie pan to make the crust. We like to use the edge of a measuring cup to make sure it’s compact and fits into the sides. We like to put my crust in the fridge or freezer while we make the filling so that it can set!

For the filling, mix together cream cheese, cool whip and peanut butter. Put this mixture on top of your crust and smooth over the top.

Next, you’re going to make a ganache-type glaze. In a saucepan, pour in your heavy cream  on medium high heat. Get your heavy cream to boil but pull the pan off the heat once the initial boiling point is reached! Place your chocolate chips in a small bowl and pour in your heated cream. This should melt your chocolate chips! You can add more chocolate chips if you’re wanting a thicker consistency. It all depends on your preference! Stir until smooth. 

Gently pour the ganache over your pie! Decorate with pieces of Reeses or chocolate chips. Let the pie rest in the freezer for at least an hour to settle. We recommend letting the pie sit out of the freezer for at least an hour before serving! This pie is super dense so it’ll be easier to cut that way.

Homemade Strawberry Milk

What You’ll Need For This Recipe:

A carton of strawberries

Your choice of milk

2 tbsp of sugar

A fun take on a childhood favorite! This recipe is super simple and tastes great. 

First, finely chop the strawberries and put into a saucepan on medium-high heat.

Add in your sugar and stir until the mixture turns into a jam-like consistency. We had to mash the strawberries a little bit with the back of my spoon against the pan to make it easier to heat up. Add ice into a glass and then your jam mixture! Pour in the milk of your choice and enjoy!

Let’s Look Into Lo-Fi

I remember the first time I heard Lo-Fi Hip Hop. I was sitting in a room with a bunch of other clueless people like me while we watched as this presenter played his own mix of music and smiled hopefully at all of us. My first thought at the moment was, “Wow, I really haven’t heard anything like this before.” My life had been filled with an endless amount of trending music with the same usual beats. After this encounter, I went out on a limb and looked up “lo fi music” and found this live stream with an anime girl studying on the cover of it. This had been streaming for years when I found it and had millions of subscribers. ChilledCow (the account with the livestream) turned out to be one of the biggest lo-fi artists with a long background in this type of music. Fans of lo-fi gush over this youtube account. My professors have played this exact live stream while we have lab time in class. Finding out more about this led me to the huge fan base of people that support the production of this music. I ended up being one of them and all it took was a few minutes of exposure.

Lo-Fi stands for “low fidelity” and has been on the public’s radar since the 1950’s. However, the rapid development of it can’t be pinpointed to a specific pathway or origin. There wasn’t only the yellow brick road, but a blue and red one too. Recently, it has become a craze among college students to listen to Lo-Fi Hip Hop to help them study, relax, and more importantly, to vibe. This style of music has taken over.  But that doesn’t mean that its popularity is necessarily something new. This fan base has spent years growing and evolving into what we know and hear now.

Somehow, the production of it has gotten even more innovative. It has been said that it originally started as just making mistakes in the music production process to give songs a different sound (which honestly sounds like a lot of fun). Now it’s turned into making those same mistakes, mixing up drum sounds, and throwing in some quotes and phrases to just add a little bit of spice. On an even better note, this style of music has become less of a “professional” thing and more of something that anyone can get into. There are countless people on social media boasting their new study/focus playlists that are filled with lo-fi hip hop songs as well as people taking popular songs and remaking them with a lo-fi style. I can’t even lie; I have gotten into it too. The entirety of lo-fi music promotes creativity, fun, and a chill ambience.

Texas Tasty’s Take on Gigi Hadid’s Monkey Bread

What You’ll Need For This Recipe:

2 cans of buttermilk biscuits

2 ½ tsps of cinnamon

Two cups of sugar

Bundt pan

GLAZE:

2 sticks of butter

½ cup cinnamon sugar mixture

½ cup brown sugar

Gigi Hadid has been popping off with the recipes on her Instagram stories during quarantine and her monkey bread is almost to die for. This masterpiece doesn’t take very long to make and only requires a few ingredients. Let’s get started!

Always preheat your oven first! For this recipe, you’ll need your oven to be set at 350 degrees. Next, cut 2 cans of buttermilk biscuits into bite size pieces. I just cut each biscuit into four pieces but you’re welcome to cut them smaller or leave them larger. 

In a separate bowl, mix the sugar and cinnamon. Set a greased bundt pan next to you so you have easy access. Take your biscuit pieces and absolutely bury them in the cinnamon sugar mixture, placing each piece in the pan afterwards. You want every piece of the biscuit to be covered, trust me. 

Now for the glaze! In a saucepan, melt together the butter, remaining cinnamon sugar mixture and brown sugar. Bring the mixture to a boil, take off the heat and stir together until the sugar dissolves. You don’t want a crunchy glaze. 

Pour the glaze over your biscuit pieces in the bundt pan. Don’t be alarmed if the glaze basically drowns the biscuits– that’s normal and makes it all the much better. Place the pan in the oven for 30 minutes, checking on it to make sure the top isn’t burning.

Once finished, make sure you let it sit for at least 10 minutes. This helps the glaze really get gooey and hold the bread together. I wouldn’t recommend saving this bread for longer than two or three days. It hardens overtime!

Wonderspaces Austin Offers New Way to See New Art

Wonderspaces, beginning in 2016, has finally made its way to Austin, TX, the city immersed with food, culture, and art. Wonderspaces is an interactive museum designed to showcase a variety of art in unique ways.

The museum is currently showcasing fourteen different types of art and will be changing up the exhibits every few months so that more artists can share their work with the community. Art is something that brings people together and this is something that is needed during this pandemic.

COVID has restricted people from gathering together; however, Wonderspaces has enforced rules and regulations so that people can enjoy art safely.

Wonderspaces Austin Tickets

Before coming to Wonderspaces, I purchased tickets and picked a timeslot to come in at. I would recommend ordering your tickets a few days in advance because there are limits on how many people can come during each time slot.

You have to have your temperature taken at the front desk upon arrival and wear a mask the whole entire time. If you do not abide by these rules, you will be asked to leave.

Wonderspaces Exhibits

Some exhibitions that you might see this month are Submergence, Body Paint, Dinner Party, and The Last Word. Submergence is a piece made by Squidsoup. This art piece has thousands of lights dancing to the sound and music that complements the color and movement.

Wonderspaces Austin

Walking through all of the moving lights make you feel like you are surrounded by a thousand fireflies. If you timed it right enough, you could walk through the lights and it would feel like the lights are following your every move.

This first piece of art is a great place for a photo opportunity. It was made for the audience to gaze at the lights and watch in awe.

Body Paint by Memo Akten is an interactive piece of art that allows the audience to create what it looks like. This exhibit focuses on the movement of the human body and energy that is produced.

Whenever you dance or move over the screen, the color changes and it follows the movement created. This allows the audience to express themselves in how they want to interpret the art.

Dinner Party by Charlotte Stoudt, Laura Wexler, and Angel Soto is an interactive exhibit that shows a film through a virtual reality headset. The room of the exhibit is dressed like the scene from the film. It’s paired with the VR experience to allow people to feel as if they were there as it was happening.

This connects the audience to the art and puts them in the shoes of someone from the film, making the art more enjoyable. If you are concerned about putting on a headset during this pandemic, you do not have to worry.

At this exhibit, they have VR sets that are cleaned and sanitized after every use, masks to go over your face before putting on the set, as well as a video model on how they are still trying to maintain social distancing.

Wonderspaces Austin reviews

The Last Word by Illegal Art is my personal favorite. This piece of art is another piece that allows the audience to interpret their own meaning.

Illegal Art made it possible for people to say things that were left unsaid. It is a great opportunity for people to reflect on their lives and share anonymously things that they never had the chance of expressing.

Wonderspaces Dallas

The art is a wall filled with tightly wrapped paper. The red end indicates that someone has written on it. A white end that you are allowed to take and write something of your own. People leave their notes anonymous so that there is no judgment or shame from writing how they feel. The artist also made it possible for people to enjoy other people’s last words.

There are several other exhibits to enjoy here, but these were some of the exhibits that stood out to me during my experience. This is a great place to come with friends to take a break from being cooped up inside.

Wonderspaces make art enjoyable and more accessible to those who do not have the chance to go see some of these pieces. Art brings people together and during this time it’s important to have people come together in the safest way possible.

Head in the Cloud-Bread

Imagine that you’re flying through the air and you stop by a cloud, grab a piece, and take a bite. It’s soft, fluffy texture is fun to hold and easy to break into more pieces. Stop imagining and start preheating the oven, because now you can bring the clouds into the kitchen as cloud bread!

Ingredients:

  • 3 Eggs
  • 30 grams (⅛ Cup) Sugar
  • 10 grams (1 ⅓ tbsp) Corn Starch
  • 1 tsp Vanilla Extract

Optional Ingredients:

  • Food Coloring
  • Chocolate Chips
  • Cup Almond Slices

Directions

  • Preheat your oven to 300°
  • Grab a baking sheet and coat surface with butter or cooking spray, or place a sheet of baking paper on it
  • Carefully crack your eggs and separate the yolk from the egg whites, placing the egg whites in a large mixing bowl. The yolks will not be used so they may be discarded.
  • Using a hand mixer, beat the egg whites until they form soft peaks or are white and fluffy. This can also be done using a whisk but may take longer.
  • Once fluffy, add sugar, cornstarch, and about 1tsp vanilla extract, mixing both in with hand mixer for about 3 minutes. 
    • Optional – Mix in food coloring
  • Once finished use a large spoon or a silicone spatula to scoop the mixture onto your baking sheet. Make a dome shape with it and be sure your edges are smooth
    • Optional – Top off with almond slices or chocolate chips by carefully placing them on top of the dome for an added texture. You could also add other toppings depending on your preferences.
  • Bake for 25-27 minutes
  • Once it’s done baking, allow it to cool and enjoy!
